I think I may have to go for the cheaper 1055T, but I still have plenty of time to consider the options. I can't salvage much from my old rig, so I'll have to buy pretty much everything :/ My biggest problem now however is what kind of motherboard should I use... Any ideas would be appreciated =)

I would go with the Asus Crosshair IV AM3 890FX Sata VI.
