I was thinking: something feels like grinding when you know that the designers created certain things just to keep you from progressing.
I mean I've played games where I'm clicking my ass off, but do not feel like I'm grinding. And I feel like grinding when I know that I'm being slowed down for the sake of being slowed down.
Work can also be seen as the anticipation of a reward. If the work is a challenge, it is less likely to be seen as grinding because it is exciting.
